Golden-brown, thin-crusted, dense, sweet, and fragrant miner's bread loaves have long become a trademark and specialty of coal miners as well as all residents of Quang Ninh.
Quang Ninh Miner's Bread – A Simple Mid-Shift Meal of Coal Miners
Mao Khe Mine was the very first place to create miner's bread. By the 1990s, other mines began to follow suit, turning the bread into a convenient mid-shift meal that helps workers replenish their energy to carry on with their hard labor deep in the mines.

Perhaps only in Quang Ninh's coal mines can one find a kind of bread that is not meant for sale. Before heading down into the pit, each miner receives a mid-shift ration consisting of one bread loaf and two cartons of milk. At a depth of 300m underground, these loaves of bread warm the miners' hearts.
For those who have witnessed the development of Quang Ninh's coal mining industry, this humble miner's bread serves as a reflection on the industry's progress and the increasingly improved livelihood of the miners.

Today, miner's bread is no longer expensive or rare, yet it still holds its distinctive delicious flavor, wrapping up the wholehearted care of the bakers for the miners—a dedicated endeavor to ensure that workers always enjoy a nutritious and fulfilling meal.
The delicious, high-quality miner's bread often follows the miners back home as a treat for their wives and children, symbolizing a sweet sharing of love among family members as well as sharing the hardships of working deep underground.

To produce a delicious miner's bread, it must go through 6 main steps: kneading the dough, resting the dough, shaping the loaves, proofing, scoring, and baking. Previously, the bread was baked in coal ovens, but nowadays electric ovens have taken their place. Modern machinery also assists various stages of breadmaking, allowing a single baker to produce thousands of loaves.

The breadmaking process holds no special secret; the most important thing is to pour one's heart into every single loaf. The bread must strictly follow weight specifications without cutting corners, the ingredients must be fresh and adhere to standards, and the crust needs to be made thin so that the bread won't turn soggy even when kept for hours.
