Eating like a local does not mean having to order a lot

One portion of bánh cuốn + chả mực is enough to appreciate the dish. If you like it, then buy squid patties to take home.

Don't order three extra types of seafood just thinking “since I'm in Ha Long, I must eat everything”.

After breakfast, instead of taking a taxi straight to an amusement park, spend 30–45 minutes sitting over coffee or taking an extra stroll. This is the time that helps you see the city as a lived-in community, rather than just a collection of check-in spots.
